

Pizza is one of those recipes that I love to make. I try to make up a few pies every week or so. I have been using a recipe from America's Test Kitchen for the dough and it has served me well. It produced a thicker more bready crust, so I was pleasantly surprised to see that this months challenge was for a thin crust pizza. The recipe was simple, but required more planning due to the overnight rise. It was particularly hard to fit this into my schedule because my husband is working late alot recently, and I have signed up for two night time sewing classes.
I mixed up the dough, made it into 4 rounds and refrigerated it overnight. The next day I rushed home from a long day of teaching and took the dough out to the fridge to come up to temperature. I heate up my oven/pizza stone to 550 and began to make my pizzas.
The first pizza I made was inspired by a tasty pie I had in Vermont this summer. First I brushed the crust with garlic oil, and then sprinkled it liberally with Asiago and Parmesan cheese. I topped it off with a few shakes of sesame seeds and dried "Italian" herbs. The pie came out garlicky salty and delicious! A definite make again.
The next pie I made was a simple plain pizza sprinkled generously with fresh basil (the more the merrier in my opinion) I made a simple pizza sauce that was spicy and sweet at the same time. This pizza was delicious. My husband and I gobbled it up quickly while watching Lost reruns!
I will keep this pizza dough recipe in my arsenal and it just might become my favorite. I may try it fried sprinkled with a little confectioners sugar--- YUM!
