Peanut Butter Cup Cookies


These are a family favorite! I recently mailed these off to my sister in law who looves peanut butter cups. I made these for my best friend and her husband and she told me they fought over the last one.

Makes 36

  • 1/2 cup creamy peanut butter
  • 4 tablespoons unsalted butter, room temperature
  • 1 cup packed light-brown sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups all-purpose flour (spooned and leveled)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup granulated sugar, for rolling dough
  • 36 mini peanut butter cups, chilled and unwrapped

Directions

  1. Preheat oven to 350 degrees. Using an electric mixer, cream peanut butter and butter in a mixing bowl until smooth. Add brown sugar; beat until combined, scraping down bowl as needed. Add eggs and vanilla, and beat until incorporated.
  2. In a small bowl, whisk together flour, baking powder, and salt. With mixer on low speed, gradually beat in flour mixture in two batches.
  3. Scoop off dough by the tablespoon; roll into balls. Place granulated sugar on a plate; roll balls in sugar, coating completely. Place 2 inches apart on a nonstick insulated baking sheet.
  4. Bake until cookies begin to puff up slightly, about 7 minutes. Remove from oven. Press one peanut butter cup in center of each cookie. Return to oven; continue baking until cookies are golden brown and chocolate has begun to melt, about 6 minutes more. Let cool at least 10 minutes on baking sheet before transferring cookies to rack to cool completely.

Cake Topper for Harriet



This topper is one of my favorites-- now I know I say that for every topper, but this one is very precious. I love the mix of colors and cute fall details! I scouted extra hard for the components to make this little guy. I trekked all the way to NYC to Tinsel Trading to find the vintage acorns and some of the little antique millinery flowers that dot this base. I also am partial to the beautiful dress the bride is wearing (a Carolina Herrera masterpiece) and the navy blue suit with the wonderful green tie!

This topper will go into the record book for coolest topper!

Even more toppers

Boy have my little hands been busy! I have been down in my cave cranking out toppers left and right-- apparently October and November are popular for weddings. Since I am a teacher, this would be a time of year that would be less than ideal for me! Even though the summer can be as hot as heck for an outdoor wedding, it was our only choice so I would have enough time to finish all my crafty projects. I sure would have been nice to have a wedding in the crisp fall air, or the temperate weather we have been having lately in the wonderful state of New Jersey.

Here are some of my latest toppers--
